The centerpiece of this classic combination is a half-pound block of one-year aged cheddar that is rich and savory with a smooth to slightly crumbly texture. True "farmhouse" cheddar is handmade from milk produced by cows raised on a single farm. In this instance, the cows are 125 grass-fed Brown Swiss from Shelburne Farms in northern Vermont.
